These mini-pizzas are quick and surprisingly filling. These are also a great alternative to those who can't have regular pizza due to dietary restrictions.
To create these
treats, you will need these ingredients:
Favorite Crackers (Preferabbly Ritz, Triscuts, Captains Wafers, etc.)
Favorite Pizza or Spagetti Sauce
Shredded or Sliced Motzerella Cheese
Parmesean Cheese (optional)
Toppings
In a microwave safe plate or saucer, place the crackers as the bottom
layer. Top each cracker with 1 teaspoon of sauce. Place your toppings
on the cracker, cover with cheese. Microwave on high for 20 seconds
or until cheese is melted. Be very careful when dealing with high temperatures!
Potential Toppings:
These toppings go great with the mini-pizzas and provide you with an
alternative to just cheese and pepperoni.
*Roast Beef with Swiss or Provolone Cheeses
*Roast Beef with green bell peppers and onions (top with Provolone or Cheddar)
*Ham
*Browned Ground Beef (left overs work well)
*Meatloaf
*Bacon or Bacon Bits
Vegetables (should be small enough to top a cracker)
Soy Cheeses (You can try any appropriate for melting)
Velveeta Cheese
*Please be certain these meats have been cooked
thoroughly prior to using on a mini-pizza!
Total Twists:
You can spice up the recipe even more by placing ingredients on a hot
baked potato instead of the crackers! This is great side to accompany
a light salad or can be a meal in itself.
